Neopolitan meringue nest

 

SERVES 4 OR 8 IF SHARING

PREP TIME – 5 MINS

 

Ingredients –

75g caster sugar

75ml water

200g dark chocolate, roughly chopped

1 pinch sea salt

12 meringue nestsneopolitan-meringue-nest

250g chocolate ice cream, softened

250g strawberry ice cream, softened

selection of fresh berries to decorate

 

Method –

  1. Place the sugar and water into a small saucepan and simmer until the sugar has dissolved.
  2. Remove from the heat, then add the chopped chocolate and stir well until the sauce is smooth. Season with a tiny pinch of salt and stir well.
  3. Set aside while you assemble the meringues.
  4. Place one meringue nest onto 4 separate serving plates then top each one with a dollop of chocolate ice cream.
  5. Place a second meringue nest on top of each one then repeat with a dollop of strawberry ice cream.
  6. Top with the last of the meringues and a generous glug of chocolate sauce.
  7. Decorate with fresh berries and serve the rest of the chocolate sauce alongside.
